Focus on sustainability: special chicken dishes

There are two special chicken dishes on the menu at Zoo Caffè & Ristorante. The meat for these comes from laying hens from organic egg production. In Switzerland, these laying hens have an average life expectancy of 18 months, as this is when their productivity declines. Once killed, the animals are usually used to generate energy in the biogas plant.

Laying hens are not suitable for traditional meat production, as the animals produce little meat and this does not meet the usual standard. In collaboration with a specialist producer, Zoo Zurich has now developed two chicken dishes in which the hens' meat can still be used. In this way, the valuable and high-quality protein resource is not lost and the laying hens are given a useful second use.
